The clocks have changed, the evenings draw in, and a new season has arrived on our mountain. Autumn at La Rosilla brings with it a gentle rhythm, cooler mornings, softer light, and the comforting crackle of the first log fires.

After a long, hot summer, we’re welcoming this change with open arms (and hiking boots laced!). The hills around us are calling once again — familiar favourite trails and new routes waiting to be explored under clear blue skies and golden leaves.

In the kitchen, our focus turns to comfort and nourishment. The markets are bursting with the season’s finest — pomegranates, chirimoya, pumpkins, sweet potatoes, and wild herbs, the citrus fruits are coming along nicely. Our dishes become heartier, simpler, and more wholesome, celebrating the natural bounty that Andalucia offers before the indulgence of Christmas begins.

The olive trees, our old friends, finally this year after years of drought, stand heavy with fruit. Each day we watch the olives plump and darken, and though it’s tempting to begin the harvest, we’re taking a little gamble and waiting, hoping for more rain to swell them just a touch more.

So, as the evenings cool and the scent of woodsmoke fills the air, we embrace the pace of this new season, hiking, cooking, harvesting, and finding joy in the simple comforts that make life at La Rosilla so special.

A delicious sweet treat.

This time of year also brings one of Spain’s sweetest traditions — Panellets. These little almond and sweet potato cookies are lovingly made to celebrate All Saints’ Day. Originating in Catalonia but enjoyed all over Spain, panellets are delicately scented with lemon zest or cinnamon, rolled in pine nuts, and baked until golden. Soft inside and slightly crisp outside, they’re a perfect bite of autumn. 

Best enjoyed with a small glass of sweet Moscatel or coffee as the evenings draw in. Their simple ingredients and handmade charm capture the comforting spirit of this season beautifully.

Autumn Escapes at La Biznaga 🍁
