The following recipe uses only locally grown ingredients and creates a delicious, vibrant and refreshing breakfast, brunch or in fact any time of day dish.
Autumn is no exception as the days get cooler and the odd day of rain arrives, produce flourishes.
Mango & pomegranate salad.
- 1 ripe mango, cubed
- 1 pomegranate
- Fresh cheese or Feta crumbled
- 1 lime, zest and juice
- Almond nibs or flaked almonds
- Poppy seeds
- Rocket leaves
In a bowl, mix the mango and pom seeds, mix with the juice of the lime.
Crumble over the feta, sprinkle with poppy seeds and almonds.
Add rocket leaves.
