“Grandmas’s Australian Fruitcake -
A delicious moist, very easy boiled fruitcake, with a family recipe that has been passed down for years, Hope you enjoy it, as much as ever one else.
2 Cups of Sugar
2 Cups of Water
250 grms of Margarine
450 grms Mixed dried Fruit
2 tsp Mixed Spice
2 tsp Bicarb
2 Cups S/R Flour
2 Cups Plain Flour
Place Sugar / water/ Fruit / Marg / Mixed Spice / Bicarb in large saucepan and boil for 5 mins. Then leave to cool.
Once cool, add 2 eggs both flours and mix well.
Put in 2 x Loaf tins or one large cake tin (2lb)with greased and lined with baking paper.
Cook in oven Gas 3, or 140 degrees for 1- 1/2 hours.
Will keep in a sealed container for weeks if it lasts that long, even delicious served with butter and strong cheese.
