Herby Red Pepper Hummus
This recipe is quick to prepare, exceptionally healthy, provides protein, essential oils and counts towards your 5 a-day…but the best thing not as fattening as standard hummus, as it’s without Tahini Paste, sometimes expensive and hard to get hold of.
1 x Jar of Chickpeas drained and rinsed.
2 x Roasted Peppers (from jar or tin sometimes called Piquillo)
1 x Clove Garlic crushed.
Juice and zest of a Lemon
Fresh green herbs (Whatever you have mint, coriander, parsley) chopped.
1 tsp Cumin seeds
1/2 tsp Cinnamon
1/4 tsp Paprika (Dulce)
Sea Salt & Pepper.
How to do it !
Dry fry the cumin seeds for 30 secs to release their scent.
Blend the chickpeas with a hand blender, add garlic , lemon juice & peppers blend some more.
Add olive oil to get your required consistency (personal choice).
Stir in all spices & fresh herbs.
Season to taste.
Drizzle top with more Olive Oil, and pinch of Paprika.
Served garnished with Pine nuts, lemon slices , crudities and flat breads.
