Fuba Cake

Brazilian ‘Fuba Cake’

The recipe for this golden cake, was given to me by my friend Bill, whilst we were visiting his home in Portugal.  Bill was very patient with us, descending on his calm home, and especially allowing me to cook in his kitchen.  Whilst out sightseeing one day, Bill whipped up this fabulous cake for us to enjoy on our return.  Fuba is cornmeal/flour which gives the cake its golden colour.  It’s traditionally baked in a circular cake mould…If you’re reading this Bill…I left it behind ;)
I hope you all enjoy it, like we did, on that lazy sunny afternoon in Portugal.
Ingredients :
2 Cups of Cornmeal
2 Cups of sugar (natural)
1 Cup of milk (Full fat)
1 Cup of SR flour
1 1/2 tbsp of butter
1 Tsp of Aniseed
3 large eggs / separated
1 tbsp of baking powder.
Method :
Cream sugar and butter together.
Add egg yolks
Aniseed, cornmeal, Flour, milk and B.powder.
Mix thoroughly and then add egg whites well beaten.
Pour batter into greased cake mould, and bake at 180c for about 45 mins.
Leave to stand for about 15 mins then turn out.
Dust with icing sugar.
