Brazilian ‘Fuba Cake’
The recipe for this golden cake, was given to me by my friend Bill, whilst we were visiting his home in Portugal. Bill was very patient with us, descending on his calm home, and especially allowing me to cook in his kitchen. Whilst out sightseeing one day, Bill whipped up this fabulous cake for us to enjoy on our return. Fuba is cornmeal/flour which gives the cake its golden colour. It’s traditionally baked in a circular cake mould…If you’re reading this Bill…I left it behind
I hope you all enjoy it, like we did, on that lazy sunny afternoon in Portugal.
