This recipe has kindly been given by my Cousin Linda, from Australia, another ‘Family foodie’, and avid food photographer. A perfect dish, for a chilly night the whole family will enjoy.

EASY Ready in 25 mins

This is my hearty “bowl of comfort” to eat while curled up in front of TV on a winter’s evening….and it’s so easy to throw together!
You could even add mushrooms, Shallots or even spinach for a variation.
500 grams tortellini
3 – 5 rashers of diced bacon chopped.
1 cup frozen peas
1 cup thickened cream
1/2 cup grated Parmesan cheese
salt and cracked black pepper
Boil the tortellini in plenty of salted water according to packet directions and drain.
While the pasta is on the boil, fry the bacon in a small saucepan, add the peas and cream and simmer for about 5 minutes until the peas are cooked through.
Return the drained tortellini to the stove in it’s saucepan and add the cream sauce. Stir through the Parmesan cheese, salt and pepper.
Serve with an extra sprinkle of Parmesan cheese.
